    Easy Matcha Pancakes

    The easiest fluffy matcha pancakes, made with only 8 ingredients. Topped here with a dark chocolate glaze, fresh berries, and shelled hemp seeds.

    Easy Matcha Pancakes (Vegan, Oil-Free, Refined-Sugar Free)

     1 cup (240mL) soy or almond milk
     1 tablespoon apple cider vinegar
     1 teaspoon vanilla extract
     1 cup (128g) flour
     1 tablespoon baking powder
     ¼ teaspoon salt
     2 tablespoon coconut sugar
     2 teaspoon matcha powder

    Combine plant-based milk, vinegar, and vanilla extract and let sit for a few minutes to curdle.

    Whisk together dry ingredients in a separate bowl, then pour the liquid mixture slowly into the dry and stir until just combined (do not over-mix).

    Using a ¼ or ⅓ cup measuring cup, pour batter on a preheated non-stick griddle or pan, and cook for 1-2 minutes until the edges are dry and several bubbles appear on its surface. Flip and cook for another 2 minutes on the other side.

    Serve with fresh fruit and maple syrup.
