    Black Sesame Matcha Chia Parfait

    A tasty and dramatic-looking parfait made by layering matcha chia pudding, a black sesame nicecream, vanilla almond yogurt, homemade granola, and fresh blackberries. 

    Black Sesame Matcha Parfait (Vegan, Gluten-Free)

    Black Layer
     3 frozen bananas
     2 teaspoon activated charcoal*
     3 tablespoon black sesame powder**
    Green Layer
     1.50 cups (375mL) almond milk
     5 tablespoon chia seeds (I used white chia seeds)
     2 teaspoon matcha powder
     ½ teaspoon vanilla extract
     2 tablespoon maple syrup
    Additional Ingredients
     1 cup dairy-free yogurt of choice
     granola
     fresh berries

    For matcha chia pudding, combine all ingredients in a jar and whisk to combine. Let set overnight (or for at least four hours) in the fridge.

    The next day, blend the frozen bananas, charcoal, and black sesame powder in a food processor until creamy.

    To assemble parfait, alternate layers of granola, the chia pudding, dairy-free yogurt, and the charcoal nicecream in a jar. Top with fresh berries and serve immediately.

    Notes

    • *Activated charcoal powder is tasteless and is used to create a dramatic dark hue. You can find it at most grocery and health stores.
    • **If you don't have black sesame powder, you can make your own by blitzing toasted black sesame seeds in a coffee grinder or food processor until fine.
