Dandan noodles, or 担担面, is a popular Sichuan noodle dish and street food, made traditionally with group pork. Here I recreated the dish with minced mushrooms instead, and the results blew me away with how closely it resembles the meaty, umami flavor of the original— definitely satisfies my craving for this Chinese classic.
