Dry Ingredients
1 + ¼ cup (180g) all-purpose flour
¼ cup (40g) cornstarch
1 tablespoon + ½ tablespoon baking powder
1 tablespoon activated charcoal powder*
¼ teaspoon salt
Wet Ingredients
1 + ½ cup almond or soy milk
2 tablespoon + ½ tablespoon apple cider vinegar or lemon juice
1 teaspoon vanilla extract
Black Sesame Paste
½ cup (60g) roasted black sesame seeds
3 tablespoon maple syrup
2 tablespoon sesame oil

To make black sesame paste, pulse roasted black sesame in a coffee grinder or food processor until fine (if using raw sesame seeds, toast on stove in a skillet first). Combine the ground sesame with maple syrup and sesame oil until it forms a thin paste.

Combine black sesame paste and the other wet ingredients stirring until smooth.

Next, whisk together dry ingredients in a large bowl. Gradually add the wet ingredients into the dry and stir until just combined— it should be a smooth, shiny batter, with no lumps.

Preheat and grease a waffle iron and pour the batter in, making sure each waffle is fully cooked before opening the waffle maker.
Notes
- *Activated charcoal powder is tasteless and is just for the dramatic color (you can omit it; the waffles will be a nutty gray instead of black). You can find it at most grocery and health stores.
