    Avocado Pesto Pasta

    This luxuriously basil pasta sauce is one of my staple recipes— it’s stupidly delicious and only takes minutes to make. The secret to the creaminess is the avocado so make sure you’re using a fully ripe one. Paired here with brown rice spaghetti for a no-fuss weekday dinner. 

    Avocado Pesto Pasta (Vegan, Gluten-Free, Oil-Free)

     7-8 oz dry pasta
     2 cloves garlic, peeled
     ¾ cup tightly packed fresh basil*
     flesh of 1 ripe medium avocado
     ¼ cup nutritional yeast
     2 tablespoon lemon or lime juice
     ½ teaspoon sea salt
     ¼ teaspoon black pepper
     1 tbsp water, plus more as needed

    Cook pasta according to package instructions, and set aside to drain (do not rinse).

    In a food processor, add garlic, basil, avocado, nutritional yeast, lemon juice, salt and pepper, and blend, stopping to scrape down the sides as needed. While machine is still running, drizzle in 1 tablespoon water (or more as needed) until sauce reaches the desired consistency.

    Taste and adjust the seasonings if needed, adding more lemon juice, salt, or nutritional yeast.

    Place pasta back in the pot, and add the avocado sauce, stirring gently until combined. Serve immediately, and top with vegan parmesan** and basil to garnish.

    Notes

    • *You can also use half basil and half parsley or cilantro.

      Just made this tonight. Very delicious. Thank you! Added some sauteed mushrooms and chopped sundried tomatoes and it was great!
