Coconut Layer
1 frozen banana
3 tablespoon coconut cream or full-fat coconut milk
Matcha Chia Pudding
1 cup + 2 tablespoon (9 fl oz) almond or coconut milk
4 tablespoon chia seeds
1 teaspoon matcha powder
12 tablespoon maple syrup
½ teaspoon vanilla extract

To make chia pudding, add all ingredients in a jar or bowl and whisk vigorously to combine. Let sit overnight in the fridge (or for at least 4 hours).

To make coconut cream, blend frozen banana and coconut cream in a food processor or high-speed blender until creamy and smooth.

To assemble, layer the chia pudding and the coconut cream along with fruit of choice.
