The easiest fluffy matcha pancakes, made with only 8 ingredients.

 1 cup (240mL) soy or almond milk
 1 tbsp apple cider vinegar
 1 tsp vanilla extract
 1 cup (128g) flour
 1 tbsp baking powder
 ¼ tsp salt
 2 tbsp coconut sugar
 2 tsp matcha powder

Combine plant-based milk, vinegar, and vanilla extract and let sit for a few minutes to curdle.

Whisk together dry ingredients in a separate bowl, then pour the liquid mixture slowly into the dry and stir until just combined (do not over-mix).

Using a 1/4 or 1/3 cup measuring cup, pour batter on a preheated non-stick griddle or pan, and cook for 1-2 minutes until the edges are dry and several bubbles appear on its surface. Flip and cook for another 2 minutes on the other side.
