Crispy fluffy black sesame waffles: subtly nutty and perfect served with maple syrup, toasted nuts, and matcha ice cream.

Dry Ingredients
 1 + 1/4 cup (180g) all-purpose flour
 ¼ cup (40g) cornstarch
 1 tbsp + 1/2 tbsp baking powder
 1 tbsp activated charcoal powder*
 ¼ tsp salt
Wet Ingredients
1 + 1/2 cup almond or soy milk
2 tbsp + 1/2 tbsp apple cider vinegar or lemon juice
 1 tsp vanilla extract
Black Sesame Paste
½ cup (60g) roasted black sesame seeds
 3 tbsp maple syrup
 2 tbsp sesame oil
1

To make black sesame paste, pulse roasted black sesame in a coffee grinder or food processor until fine (if using raw sesame seeds, toast on stove in a skillet first). Combine the ground sesame with maple syrup and sesame oil until it forms a thin paste.

2

Combine black sesame paste and the other wet ingredients stirring until smooth.

3

Next, whisk together dry ingredients in a large bowl. Gradually add the wet ingredients into the dry and stir until just combined— it should be a smooth, shiny batter, with no lumps.

4

Preheat and grease a waffle iron and pour the batter in, making sure each waffle is fully cooked before opening the waffle maker.
