Avocado Pesto Pasta

This luxuriously creamy pasta sauce is one of my staple recipes— it’s ridiculously delicious but only takes minutes to make. The secret to the creaminess is the avocado so make sure you’re using a fully ripe one. Paired here with brown rice spaghetti for an easy weekday dinner! Vegan, gluten-free, oil-free.

 7-8 oz dry pasta
 2 cloves garlic, peeled
 ¾ cup tightly packed fresh basil*
 flesh of 1 ripe medium avocado
 ¼ cup nutritional yeast
 2 tbsp lemon or lime juice
 ½ tsp sea salt
 ¼ tsp black pepper
 1 tbsp water, plus more as needed

Cook pasta according to package instructions, and set aside to drain (do not rinse).

In a food processor, add garlic, basil, avocado, nutritional yeast, lemon juice, salt and pepper, and blend, stopping to scrape down the sides as needed. While machine is still running, drizzle in 1 tbsp water (or more as needed) until sauce reaches the desired consistency.

Taste and adjust the seasonings if needed, adding more lemon juice, salt, or nutritional yeast.

Place pasta back in the pot, and add the avocado sauce, stirring gently until combined. Serve immediately, and top with vegan parmesan** and basil to garnish.
